Curried sweet potato and pumpkin soup

  • 1 large leek white and green part, sliced
  • 2 cloves garlic, chopped
  • 1 tbsp olive oil
  • 1 tsp chopped fresh thyme or rosemary
  • 2 tsp curry powder
  • 500g pumpkin, peeled and diced
  • 400g sweet potato, diced
  • 1 bay leaf
  • Salt and pepper
  • 800ml vegetable stock
  • 300ml milk
  • 100ml cream

Heat the oil in a large pan and sauté together the garlic, leek, herbs and curry powder for 5 minutes till soft. Add in the pumpkin and sweet potato and cook for just 2 minutes. Season with salt and pepper, add in the bay leaf and hot stock and cook for 20 minutes. Stir in the milk and cream, remove the bay leaf and  blitz to a fine soup.

Toasted pumpkin seeds

  • 150g white pumpkin seeds, shells on Or
  • 150g green shelled pumpkin seeds
  • Drizzle olive oil
  • Salt and pepper
  • Garlic granules, sweet paprika

This is a very easy recipe. Mix together all the ingredients and cook in a hot frying pan or on a baking tray in the oven at 200`c for 3-5 minutes, tossing around to make sure the seeds don’t burn.


Roasted pumpkin skins

  • Thinly peeled pumpkin or butternut squash skins
  • 1 tbsp olive oil
  • Salt and pepper
  • Dried garlic granules, paprika, thyme

Mix together the pumpkin skins, olive oil, and season with salt, pepper and the dried herbs and spices of your choice. Bake in the oven at 200`c for 20-25 minutes until golden and crisp.
